The Vineyards: |
For this wine, we sourced our Cabernet
Sauvignon from three Sonoma County sub-appellations known for
their outstanding quality grapes and long-lived wines: Dry Creek
Valley , Alexander Valley and Sonoma Valley . In keeping with
classic Bordeaux style, we combined small amounts of Merlot,
Cabernet Franc, Petit Verdot, Malbec and Petite Sirah into the
Cabernet Sauvignon in order to give the wine balance and complexity
in aromatics and flavors. |

The Vintage |
2005 was a late harvest for Cabernet
Sauvignon due late budbreak, higher yields, and a mild, foggy
summer and fall. These were also conditions creating lots of
fruit and more tea-like Cabernet Sauvignon expressions. Fortunately,
the Indian summer kicked in the 2nd week of October, and this
enabled Cabernet to fully ripen without green flavors. Harvest
dates, from September 23rd to November 10th, were extended in
this cool year, allowing us to be highly selective in our fruit
sourcing and to let the fruit remain on the vine for maximum
flavor extraction. |

Winemaker's Notes: |
This dark garnet-colored wine has
black tea and black cherry aromas with hints of cigar box and
mocha from barrel aging. Full-bodied, with silky tannins and
a hint of juicy blackberry, this wine is well balanced with flavors
of cedar, raspberry and cocoa. The finish is long, carried by
the toasty oak, forest floor character and structured tannins
that promise this wines potential in the next several years.
Enjoy now, cherishing the fine grained tannins and full body,
or cellaring up to five years for a softening of the tannins
and emergence of more spice, leather, vanilla and chocolate notes. |

"Tight and focused, with a firm band of dried currant, spice,
cedary oak and floral notes that are complex and persistant.
Drink now through 2012."
Four Stars from the LCBO: "Here's
an expressive nose evoking dark chocolate and cassis with a subtle
leafy note indicating some Cabernet Franc in the blend. Firmly
tannic and full bodied, the wine is a little young but should
develop exceptional balance with a few years in the cellar. It
finishes long with no shortage of fruit, and gets high marks
for such good value for a wine worthy of aging. If you'd like
to enjoy it in its youth, decant for at least an hour and serve
with very rare grilled steak." |

BREADED
PORK TENDERLOIN III |
Prep Time: 12 Minutes
Cook Time: about 10 Minutes
Ready In: about 22 Minutes
Makes 4 servings
Ingredients:
1 pound pork tenderloin
2 tsp. olive oil
1 sweet onion
1 clove garlic
1 tsp. tablespoon basil
1 tablespoon marjoram
1 tablespoon rosemary
1 tablespoon thyme
3 Tbsp. Italian-style bread crumbs
1/2 cup freshly grated Romano cheese
1 tsp. salt
1/2 tsp. cracked black pepper
Directions:
1. Chop the onion. Set
aside.
2. Mince the garlic clove. Set
aside.
3. Cut the pork tenderloin crosswise
into about 1 inch thick slices the place then flatten each slice
to about 1/2 inch thick. Set aside.
4. In a medium size mixing bowl
add the bread crumbs, Romano cheese, basil, marjoram, rosemary,
thyme, salt and pepper then mix thoroughly.
5. Take each pork tenderloin
slice and coat with the bread crumb mixture on all surfaces.
Set aside.
6. In a large non-stick skillet,
heat the olive oil over medium heat.
7. Add the garlic, onion, and
coated pork tenderloin slices to the skillet and slowly cook
for 10 minutes.

Makes 2 to 4 servings
Ingredients:
4 skinless, boneless
chicken breast halves
1 (10 ounce) can diced tomatoes with green chile peppers
1 (15 ounce) can black beans, rinsed and drained
1 (8.75 ounce) can whole kernel corn, drained
ground cumin to taste
Directions:
1. In a large skillet,
heat oil over medium high heat.
2. Brown chicken breasts on both
sides.
3. Add tomatoes with green chile
peppers, beans and corn. Reduce heat and let simmer for 25 to
30 minutes or until chicken is cooked through and juices run
clear. Add a dash of cumin and serve.

ROASTED
PORK TENDERLOIN II |
Prep Time: 5 Minutes
Cook Time: about 20 Minutes
Ready In: about 25 Minutes
Makes 4 servings
Ingredients:
1 pound boneless pork
tenderloin
1/2 teaspoon ground basil
1/2 teaspoon rosemary
1/2 teaspoon cracked black pepper
1/2 teaspoon thyme
Directions:
1. Pre-heat the oven
to 425 degree F.
2. In small bowl, combine the
basil, rosemary, cracked black and thyme until blended to make
a seasoning mixture.
3. Rub the pork tenderloin with
the seasoning mixture, covering the entire surface.
4. Place in the seasoned pork
tenderloin in a shallow roasting pan and roast in the preheated
oven for about 20 minutes, until internal temperature (measured
with a meat thermometer) reads 155-160 degrees F.
5. Remove from oven and let the
cooked pork tenderloin rest for 5 minutes before slicing to serve.

Makes 4 servings
Ingredients:
2 pounds New York Sirloin
Steak sirloin, cut into 2 inch long by 1/2 thick strips
garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon
1/4 cup hot water
1 tablespoon cornstarch
1/2 cup chopped onion
2 large green bell peppers, roughly chopped
1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon white sugar
1 teaspoon salt
Directions:
1. Sprinkle strips of
New York Sirloin strips with garlic powder to taste. In a large
skillet over medium heat, heat the vegetable oil and brown the
seasoned beef strips.
2. Transfer to a slow cooker.
3. Mix bouillon cube with hot
water until dissolved, then mix in cornstarch until dissolved.
Pour into the slow cooker with meat. Add onion, green pepper,
stewed tomatoes, soy sauce, sugar and salt.
4. Cover and cook on high for
3 to 4 hours, or on low for 6 to 8 hours
