BRINING YOUR OWN CORNED BEEF |
Prep Time: 15 Minutes
Cook Time: about 10 Minutes
Refrigerate: about 7 to 10 Days
Ready In: about 25 Minutes
Ingredients:
10 lb. whole beef brisket
5 garlic cloves, peeled and cut in thirds
3 quarts water
1 cup Kosher salt
1/2 cup white vinegar
4 tablespoons sugar
3 bay leaves
1 teaspoon peppercorn
1/2 teaspoon mustard seeds
1 pinch ground cloves
Directions:
1) Combine all of the
brine ingredients and bring to a boil, then cool.
NOTE: To test the saltiness of
the brine, put an egg (in shell) in the cooled brine. If it doesn't
float, add enough salt until it does.
2) Place the beef brisket and the cooled brine into a extra large
non-reactive, stainless steel container.
3) Make sure that all of the
beef brisket is covered by the brine (you can cut the beef brisket
in half if you need too to fit in container).
NOTE: Place a plate on top of
the beef brisket to submerge.
4) over and refrigerate for 6
to 7 days, turning occasionally.
5) After the 6 to 7 days, remove
brisket from the brine and discard the brine.
6) Rinse the beef brisket thoroughly and prepare Corned Beef
according to your favorite recipe.

3 tablespoons pickling spices
8 bay leaves
Directions:
1) Combine all of the
brine ingredients and bring to a boil, then cool.
NOTE: To test the saltiness of
the brine, put an egg (in shell) in the cooled brine. If it doesn't
float, add enough salt until it does.
2) Place the beef brisket and the cooled brine into a extra large
