On the grill, in the oven, or part of your favorite recipe... you'll find Chairman's Reserve Certified Premium Beef turns your recipes into mouth-watering, dining delights your family will truly enjoy!

THREE EASY STEPS TO STIR FRYING BEEF:

1: Heat small amount of oil in wok or skillet over medium-high heat until hot.

2: Stir-fry beef strips* in 1/2 pound batches, continuously tossing, until outside surface is no longer pink (do not overcook).

3: Add additional oil for each batch. Cook beef and vegetables separately; then combine and heat through.

*TIP: To cut your own beef strips (top sirloin, top round, round tip and flank steaks), partially freeze beef or easier slicing. marinate to add flavor or tenderize while preparing other ingredients.

BAKED BONELESS CHICKEN BREASTS
WITH MONTEREY JACK CHEESE

Prep Time: 30 minutes
Cook Time:
55 Minutes
Ready in:
1 hour and 25 Minutes
Makes 4 servings

Ingredients:
4 skinless, boneless chicken breast halves - pounded
1/4 cup butter, divided
1/4 cup chopped onion
4 large mushrooms, chopped
1/2 clove garlic, minced
1 tablespoon all-purpose flour
1/4 cup chicken stock
1/2 teaspoon celery salt
1/4 teaspoon white pepper
1/4 cup white wine
3/4 cup shredded Monterey Jack cheese
1/2 cup all-purpose flour
salt and pepper to taste

Directions:
1. Preheat oven to 300 degrees F (150 degrees C). Lightly grease a medium baking dish.

2. Melt 1/4 cup butter in a medium skillet over medium heat. Stir in onion, mushrooms and garlic. Cook until tender, about 10 minutes.

3. Stir in 2 tablespoons flour, chicken stock, celery salt, white pepper and white wine. Reduce heat to low, and cook, stirring frequently, until thickened and well blended, about 10 minutes.

4. Mix 1/2 cup Monterey Jack cheese into the thickened sauce mixture, and stir until melted.

5. In a shallow medium bowl, mix 1 cup flour with salt and pepper. Dredge chicken breast halves in the flour mixture to coat. Melt remaining 1/4 cup butter in a large skillet over medium high heat.

6. Cook chicken until lightly browned on all sides. Arrange breast halves in the prepared baking dish, and cover with the sauce.

7. Top chicken breast halves with remaining Monterey Jack cheese. Bake in the preheated oven 25 minutes, or until chicken is no longer pink and juices run clear.

BROILED SANTA FE STEAKS

Prep Time: 10 Minutes
Cook Time: 11 Minutes
Makes 4 servings

Ingredients:
4 Club Sirloin Steaks
1/2 cup chunky salsa
1/2 cup black beans, drained and rinsed
2 tablespoons diced red onion
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 1/2 teaspoons chili powder, divided
2 teaspoons chopped fresh oregano

Directions:
1. Mix salsa, beans, onion, cilantro, lime juice and 1/2 teaspoon of the chili powder. Cover and refrigerate while preparing beef.

2. Set oven control to broil.

3. Sprinkle both sides of beef with remaining 1 teaspoon chili powder and the oregano; gently press into beef. Place beef on rack in broiler pan. Broil with tops 4 to 6 inches from heat 6 minutes; turn. Broil 2 to 5 minutes longer for medium doneness. Serve with salsa.

Recipe for the Grill!  

GRILLED GARLIC-LEMON RUBBED DELMONICO (RIB EYE) STEAKS

Prep Time: 5 Minutes
Cook Time:
11 to 14 Minutes
Ready In:
16 to 19 Minutes
Makes 4 servings


Ingredients:
4 Delmonico (rib eye) Steaks cut about 1 inch thick
2 tsp. minced cloves garlic
pulp of 2 fresh limes
1/4 cup of fresh lime juice
2 tsp. rosemary
2 tsp. fresh chopped thyme
1 tsp. crack black pepper
1/2 tsp. olive oil


Directions:
1. Pre-heat grill to medium heat.

2. In a mixing bowl, combine thoroughly the thyme, garlic, cracked black pepper, lime juice, lime pulp and olive oil until well blended.

3. Rub the seasoning mixture onto both sides of each steak, pressing evenly. (Discard rub mixture after rubbing onto the raw steaks.)

4. Place each steaks on the heated grill grid and grill, covered, 11 to 14 minutes for medium rare to medium doneness, turning once.

GRILLED NEW YORK SIRLOIN STEAK ITALIAN STYLE

Prep Time: 5 Minutes
Cook Time:
10 to 14 Minutes
Ready In:
15 to 19 Minutes
Makes 2 to 3 servings


Ingredients:
2 lbs. New York Sirloin Steak
dash of salt (optional)
1/2 cup shredded Parmesan cheese
Seasoning Mixture:
2 tsp. fresh chopped thyme
3 tsp. minced cloves garlic
1 tsp. black pepper
1 tsp. oregano
1 tsp. rosemary
1 tsp. Italian Seasoning
1/2 tsp.olive oil.

Directions:
1. Pre-heat grill to medium heat.

2. In a mixing bowl, combine thoroughly the thyme, garlic, black pepper, oregano, rosemary, Italian seasoning and olive oil until well blended.

3. Rub the seasoning mixture onto both sides of each New York Sirloin Steak, pressing evenly.

4. Place New York Sirloin Steak on heated grill grid and grill, covered, 10 to 14 minutes for medium rare to medium doneness, turning once.

5. During last 2 minutes of grilling, sprinkle with the Parmesan cheese. Season with salt, as desired.
