** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF AND DUCANE GAS GRILLS **
JIM BEAM HAM
12 lb. pre-cooked, bone-in ham*
paprika
salt
pepper
Injecting/Basting Sauce:
1 cup Jim Beam bourbon
1 cup apple cider
12 oz. beer
2 medium apples, quartered
3 medium oranges, quartered
2 stalks celery, chopped
1 cup brown sugar
3 tsp. minced garlic
Pat ham down with salt, pepper
and paprika. Combine sauce ingredients and inject half into ham.
Place ham on rotis, and place other half of sauce in drip pan
under ham. Turn rotis on medium to allow for several hours of
cooking time. Baste ham every 20 minutes until thoroughly heated
(approximately 2 hours) - internal temperature should reach 170°F.
Wet hickory, apple or sassafras wood may be added to Smoke-It-Tray®
for additional flavor.
* If using an uncooked boneless
ham, turn rotis to high and adjust cooking time.

GRILLED STUFFED MUSHROOMS
24 medium mushrooms
1/4 cup chopped green onion
3 Tbsp. margarine, divided
2 tsp. flour
1/2 tsp. dried marjoram, crushed
dash pepper
1/4 cup dry white wine
1/2 cup finely chopped cooked ham
1 Tbsp. snipped parsley
Remove stems from mushrooms; reserve caps. Chop stems. Cook the
chopped stems and onion in 1 Tbsp. margarine just till tender.
Blend in flour, marjoram and pepper; add wine. Cook and stir
till thickened and bubbly. Stir in ham and parsley. Stuff mushroom
caps with ham mixture. Place mushrooms on a 20" x 12"
piece of foil; dot with remaining margarine. Fold foil to seal
edges; grill on gas grill set at medium for 15 to 20 minutes.

PINEAPPLE BANANAS FOSTER
3 firm bananas
1/2 cup margarine melted
1/2 cup brown sugar
dash cinnamon
6 thin slices pineapple, fresh or canned
1/2 to 1 tsp. rum extract or 2 Tbsp. dark rum
6 large scoops vanilla ice cream
Cook bananas in peel on gas grill
over medium-high flame 5 to 7 minutes per side (until peel is
dark brown). Combine margarine, brown sugar, pineapple and cinnamon;
stir until syrupy. Add peeled, cooked bananas cut in fourths,
and pineapple slices. Baste in syrup, turning until fruit is
glazed. Add rum extract or rum. Place a pineapple slice in each
bowl; top with scoop of ice cream and banana sauce. Makes 6 servings.

** GRILLING TIP FROM HAVERHILL
BEEF AND DUCANE GAS GRILLS **
QUESTION: How do I prevent meat from sticking to the grill?
ANSWER: Preheat the grill with the hood down for at least 15
minutes. Place meat product on the grill and allow it to remain
there for at least 1/2 the recommended cooking time. A light
coat of oil applied to the meat prior to cooking will also help.
