** 3 HOLIDAY APPETIZER RECIPES
FOR YOU FROM HAVERHILL BEEF **
Cocktail Meatballs
Prep Time: 15 Minutes
Cook Time: 20 to 25 Minutes
Ready In: 25 to 40 Minutes
Makes 4 to 6 servings
Ingredients:
1 pound ground beef
1 egg, beaten
1/8 cup water
1/2 cup bread crumbs
3 tablespoons diced onion
1 (8 ounce) can jellied cranberry sauce
6 ounces chili sauce
1 tablespoon brown sugar
1/2 tablespoon lemon juice
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Mix together the ground beef, egg, water, bread crumbs and
chopped onion. Form into 25 to 30 small balls.
3. Bake for 20 to 25 minutes, turning once or microwave on high
for 5 minutes.
4. In a 2 quart saucepan over low heat, blend together the cranberry
sauce, chili sauce, brown sugar and lemon juice. Add meatballs
and simmer for one hour.

Kielbasa Made Easy
Prep Time: 15 Minutes
Cook Time: 1 Hour
Ready in: 1 Hours and 15 Minutes
Makes 12 to 15 Servings
Ingredients:
2 pounds of kielbasa sausage, cut into 1 inch pieces
2 (16 ounce) cans whole cranberry sauce
1 (18 ounce) bottle barbecue sauce
Directions:
1. Brown the kielbasa in a large skillet over medium heat high
heat.
2. Place the browned kielbasa, cranberry sauce and barbeque sauce
in a slow cooker set on low. Allow the mixture to simmer at least
1 hour before serving warm.

Chicken and Broccoli Braid
Prep Time: 20 Minutes
Cook Time: 28 Minutes
Ready in: 48 Minutes
Makes 6 servings
Ingredients:
2 cups diced, cooked chicken breast
1 cup fresh broccoli, chopped
1/2 cup red bell pepper, chopped
1 clove crushed garlic
1 cup shredded Cheddar cheese
1/2 cup mayonnaise
2 teaspoons dried dill weed
1/4 teaspoon salt
2 tablespoons slivered almonds
1/4 cup diced onion
2 (8 ounce) packages refrigerated crescent rolls
1 egg white, beaten
Directions:
1. Preheat oven to 375 degrees F (190 degrees F).
2. In a large bowl, toss together chicken, broccoli, red bell
pepper, garlic, Cheddar cheese, mayonnaise, dill weed, salt,
almonds and onion.
3. Unroll crescent roll dough,
and arrange flat on a medium baking sheet. Pinch together perforations
to form a single sheet of dough. Using a knife or scissors, cut
1 inch wide strips in towards the center, starting on the long
sides. There should be a solid strip about 3 inches wide down
the center, with the cut strips forming a fringe down each side.
Spread the chicken mixture along the center strip. Fold the side
strips over chicken mixture, alternating strips from each side.
Pinch or twist to seal.
4. Brush braided dough with the egg white. Bake in the preheated
oven 25 to 28 minutes, or until golden brown.

** COOKING TIP FROM HAVERHILL
BEEF **
Fabulous Food Garnishes . . .
Add a note of glamour to a holiday
dinner party or buffet with these quick and easy decorative touches.
Appropriate garnishes whet the
appetite and enliven a meal. You can dress up your dishes to
fit almost any occasion with these simple finishing touches.
Green Onion Brushes: Slice off
the roots and most of the top portions from green onions. Make
slashes at both ends to produce a fringe. Place the green onions
in ice water, and the ends will curl back to resemble brushes.
Carrot Curls: Using a vegetable
peeler, cut thin lengthwise strips of carrot. Roll each carrot
strip up and secure with a wooden pick. Place in ice water for
several hours to curl. Just before garnishing, remove wooden
picks.
Chocolate Curls: Allow a bar
of milk chocolate, sweet baking chocolate, or semisweet chocolate
to come to room temperature. Carefully draw a vegetable peeler
across the bar of chocolate to make long, thin strips. They will
curl as you cut them. For narrow curls use the narrow side of
the chocolate bar and for wide curls use the broad surface.
Colorful Cutouts: Using tiny
hors d'oeuvre cutters, cut slices of jellied cranberry sauce
or red or green sweet peppers into tiny shapes.
Fluted Cucumbers or Zucchini:
Draw the tines of a fork lengthwise down a cucumber or zucchini;
repeat all around vegetable. Cut crosswise into slices.
Lemon Twists: Cut 1/8-inch-thick
slices from a lemon. Cut halfway across each slice, stopping
at the center, and twist the ends of the slice in opposite directions.
Strawberry Fans: Use fresh strawberries
with the green tops still attached. Slice each berry from the
tip almost all the way to the stem end; carefully fan out the
berry slices.
Sugar/Cocoa Designs: For a festive
look, create a powdered sugar or cocoa powder design on top of
an unfrosted cake or bar cookies. Simply cut a pattern from a
sheet of stiff paper, or use a clean paper doily. Place the paper
on the cake and sift the powdered sugar or unsweetened cocoa
powder on top. Carefully remove the paper after sifting.
