** 3 RECIPES FOR YOU FROM HAVERHILL
BEEF **
Herb-Stuffed Pork Tenderloin
Prep Time: 25 Minutes
Cook Time: 50 to 60 Minutes
Ready In: 75 to 85 Minutes
Makes 6 servings
Ingredients:
2 tablespoons Dijon-style mustard
18 ounces pork tenderloin
1-1/2 cups shredded romaine
1/2 cup assorted snipped fresh herbs (such as sage, thyme, rosemary,
dill, and/or basil)
3 tablespoons fine dry bread crumbs
1 slightly beaten egg white
2 teaspoons olive oil or cooking oil
Coarsely ground black pepper
Snipped fresh chives (optional)
1 recipe Mustard Sauce (see below)
Directions:
1. Trim any fat from meat. Using a sharp knife, make a lengthwise
cut down the center of roast, cutting to, but not through, the
other side. Spread the meat flat. Place tenderloin between 2
sheets of plastic wrap and pound meat lightly with the flat side
of a meat mallet to about a 13x8-inch rectangle. (If necessary,
use a portion of a second tenderloin to make 18 ounces. Overlap
and pound the pieces to make a single rectangle.) Fold in the
narrow ends as necessary to make an even rectangle. Spread mustard
evenly over tenderloin.
2. Stir together romaine, herbs, bread crumbs, and egg white
in a medium bowl. Spoon evenly over pork. Roll tenderloin up
jelly-roll style, beginning at narrow end. Tie meat with string,
first at center, then at 1-inch intervals.
3. Place meat on rack in a shallow roasting pan. Brush oil over
meat. Sprinkle with pepper. Roast, uncovered, in a 375 degree
F oven for 50 to 60 minutes or until meat is tender and slightly
pink (160 degrees F) and juices run clear. Transfer to a warm
platter. Remove strings; keep warm while preparing sauce. To
serve, cut tenderloin into 12 slices. Spoon Mustard Sauce over
each serving.
Makes 6 servings.
Mustard Sauce: In small saucepan combine 1/3 cup plain fat-free
yogurt, 2 tablespoons fat-free mayonnaise or salad dressing,
1-1/2 to 2 teaspoons Dijon style mustard, and 1 teaspoon honey.
Cook over low heat for 2 to 3 minutes or just until heated through.
Do not boil. Serve immediately with pork slices.

Glazed Meatloaf
Prep Time: 10 Minutes
Cook Time: 1 Hour and 10 Minutes
Ready In: 1 Hour and 20 Minutes
Makes 6 servings
Ingredients:
1/2 cup ketchup
1/3 cup brown sugar
1/4 cup lemon juice, divided
1 teaspoon mustard powder
2 pounds ground beef
3 slices bread, broken up into small pieces
1/4 cup chopped onion
1 egg, beaten
1 teaspoon beef bouillon granules
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl, combine the ketchup, brown sugar, 1 tablespoon
lemon juice and mustard powder.
3. In a separate large bowl, combine the ground beef, bread,
onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup
mixture from the small bowl. Mix this well and place in a 5x9
inch loaf pan.
4. Bake at 350 degrees F (175 degrees C) for 1 hour, drain any
excess fat, coat with remaining ketchup mixture and bake for
10 more minutes.

Rosemary Marinated Lamb Chops
Prep Time: 15 minutes
Cook Time: 12 Minutes
Ready in: 1 Hour
Makes 8 servings
Ingredients:
2 teaspoons Crushed Rosemary Leaves
1 teaspoon Thyme Leaves
1 teaspoon Ground Black Pepper
1 teaspoon Garlic Powder
1/2 teaspoon salt
1 cup finely chopped onion
1/2 cup orange juice
1/4 cup dry white wine
3 tablespoons olive oil, divided
8 loin lamb chops, cut 1 to 1 1/4-inch thick, trimmed
Directions:
1. Mix crushed rosemary, thyme, black pepper, garlic powder and
salt in a bowl. Add onion, orange juice, white wine and 2 tablespoons
olive oil. Whisk together and reserve 1/2 cup marinade mixture
for later use.
2. Place lamb chops in self-closing
plastic bag; add marinade. Turn to coat. Refrigerate 30 to 60
minutes. Remove lamb from marinade and blot dry with a paper
towel. (Do not remove onion pieces from chops).
3. Heat remaining oil in a heavy
skillet over medium-high heat. Place lamb in skillet. Sear one
side of lamb approximately 4 minutes or until well browned. Turn
chops over and cook 4 minutes longer or until desired doneness.
Add reserved marinade and simmer 2 minutes. Remove lamb to a
serving plate. Pour reduced marinade over lamb.

Carving Beef . . .
QUESTION: Do you have any tips
for carving a beef roast?
ANSWER: Carving is an important
step to creating a great beef eating experience. If you carve
beef too quickly after cooking, your steaks can be dry and your
roasts tough and stringy. Letting the beef stand for only a couple
of minutes can make all the difference. It gives the natural
juices time to redistribute and reduces moisture loss. So, how
long do you wait? Follow these guidelines:
Steaks - wait 1 to 2 minutes
Roasts - wait 10 to 15 minutes, keep covered

BEEF'S WINE CELLAR **
How To Serve Wine At The Best
Temperature . . .
When it comes to knowing what
temperature at which to serve a wine: Twenty minutes before
dinner, you take the white wine out of the fridge, and put the
red wine in.
This rule is intended to fix
the two most common mistakes in wine service: People tend to
serve white wines too cold and red wines too warm.
White wines too warm will taste
alcoholic and flabby, while white wines too cold will be refreshing
but nearly tasteless. As for reds, keep them too warm and they
will taste soft, alcoholic and even vinegary. Too cold and they
will have an overly tannic bite and much less flavor.
Heres how to be confident
the wine you serve will be on its best behavior:
Champagne and other sparkling
wines should start out totally chilled. Put them in the refrigerator
an hour and half before serving or in an ice bucket with an ice-water
mixture at least 20 minutes before serving. For vintage-dated
Champagne and other high-quality bubbly, however, you should
let the bottle then warm up a bit if you dont want to miss
out on the mature character for which youre probably paying
extra.
Sauvignon Blanc, Pinot Grigio,
White Zinfandel and other refreshing white wines should also
be chilled to refrigerator temperature (usually 35 to 40 degrees)
for an hour and a half before serving. But the better examples,
such as barrelaged wines like Fume Blanc (made from Sauvignon
Blanc grapes) will improve if brought out 20 minutes early or
allowed to warm up slightly during hors doeuvres or dinner.
Chardonnay, White Burgundy and
other rich, full-bodied and barrel-fermented white wines of high
quality taste their best at classic cellar temperature,
or 55 degrees. Winemakers in Frances Burgundy region know
what theyre doing when they offer tastes to visiting journalists
and wine buyers directly from the barrels of Chardonnay in their
cool, humid underground cellars. So put these into the fridge
an hour and half before serving, but bring them out 20 minutes
early to warm a bit.
Sweet dessert wines need the
same treatment as Sauvignon Blanc, above, with the exception
of fortified dessert wines like Port and sweet Sherry, which
are better at cellar temperature or warmer. Treat dry Sherry
like Sauvignon Blanc, too.
Almost all red wines show their
best stuff when served at about 65 degreescool, but warmer
than cellar temperature. This is not room temperature, unless
you happen to live in a Scottish castle or in San Francisco during
July. So if you dont keep your red wine in a cool cellar
or cooled storage unit, you will enjoy it more if you chill it
for 20 minutes in the refrigerator before serving.
