** 3 "BURGER" RECIPES FOR YOU FROM HAVERHILL BEEF
**
Grilled Jalapeno Cheeseburgers
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 burgers
Ingredients:
1 lb. lean ground beef
2 tsp. fresh jalapeno pepper, seeded and chopped
1 and 1/2 tsp. chili powder
1/4 cup shredded Monterey Jack cheese
4 thin tomato slices
4 hamburger buns, split, toasted
Directions:
1. Preheat grill to medium heat.
2. In medium bowl, combine ground beef, jalapeno pepper and
chili powder, mixing lightly but thoroughly.
3. Shape beef mixture into four 1/2 inch thick patties.
4. Place patties on grid over medium heat. Grill uncovered
14-16 minutes or until centers are no longer pink, turning once.
Check with a meat thermometer for an internal temperature of
160°F.
5. Approximately 1 minute before burgers are done, sprinkle
each with 1 Tbsp. cheese.
6. Place one slice tomato on bottom half of each bun and top
with burger. Close sandwiches and serve.

Grilled Savory Beef Burgers
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 burgers
Ingredients:
1 lb. lean ground beef
2 tablespoons minced yellow onion
1 tablespoon Dijon mustard
3/4 teaspoon dried Italian seasoning, crushed
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon cracked black pepper
6 to 8 lettuce leaves
4 tomato slices (1/4-inch thick)
8 thin red onion rings
4 hamburger buns, split, toasted
Directions:
1. Preheat grill to medium heat.
2. In a large bowl, combine ground beef, minced onion, mustard,
Italian seasoning, salt, cumin and pepper. in large bowl, mixing
lightly but thoroughly.
3. Shape beef mixture into four 1/2 inch thick patties.
4. Place patties on grid over medium heat. Grill uncovered
14-16 minutes or until centers are no longer pink, turning once.
Check with a meat thermometer for an internal temperature of
160°F.
5. Place burger on bottom half of each bun; layer lettuce,
tomato and onion rings on the burger. Close sandwiches and serve.

Grilled Texas-Style Beef Burgers
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Ready in: 30 Minutes
Makes 4 burgers
Ingredients:
1 lb. ground beef
2 to 4 cloves garlic, minced
5 to 6 shakes Worcestershire sauce
1/2 tsp. Cajun seasoning
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup hot or hearty barbecue sauce
4 hamburger buns, split, toasted
Directions:
1. Preheat grill to medium heat.
2. In medium bowl, combine all ingredients mixing lightly
but thoroughly.
3. Shape into 4 patties.
4. Place patties on grid over medium ash-covered coals. Grill
uncovered 14-16 minutes or until centers are no longer pink,
and internal temperature reaches 160°F, turning once.
5. Place on bottom half of each bun and top with burger. Close
sandwiches and serve.

** GRILLING TIPS FROM DUCANE GAS GRILLS **
- To keep your steak or chop from curling around the edges,
slash the outer layer of fat at 1 inch intervals.
- What is a Marinade? A seasoned liquid that adds flavor and
sometimes tenderizes meat.
- To tenderize meat the marinade must have an acidic ingredient
such as lemon juice, wine or a natural enzyme like fresh ginger
or pineapple.
- Tender cuts of meat can be marinated in as little as 15
minutes! Less tender meats need to be marinated at least 6 hours.
- What is a Rub? A blend of seasonings usually made with spices
and herbs applied to the surface of the uncooked meat, such as,
beef steaks, roasts, or hamburger. Some rubs may be used as a
paste by adding crushed garlic or vegetable oil.
- Vegetables: If your vegetables are being charred on the
outside but raw on the inside, try this: Microwave them from
1-3 minutes, brush with olive oil, remove them from microwave
dish etc., and grill until tender, turning once.
- Always pre-heat your grill: It is extremely important that
your grill be up to temperature before you begin using. After
lighting the grill, close hood and preheat for at least 15 minutes.
This will ensure all components are hot enough for proper grilling.
Note: Never leave grill unattended.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!

** HOW TO HANDLE RAW BEEF SAFELY FROM THE USDA **
RAW BEEF:
Select beef just before checking out at the register. Put packages
of raw beef in disposable plastic bags, if available, to contain
any leakage which could cross-contaminate cooked foods or produce.
Beef, a perishable product, is kept cold during store distribution
to retard the growth of bacteria.
Take beef home immediately and refrigerate it at 40 °F;
use within 3 to 5 days (1 or 2 days for variety meats such as
liver, kidneys, tripe, sweetbreads, or tongue) or freeze (0 °F).
NOTE: If your traveling with raw meat, pack meat in ice in
a cooler chest, especially in summer heat.
