** 3 RECIPES FOR YOU FROM HAVERHILL BEEF **
Rotisserie Beef Roast
Prep Time: 5 Minutes
Marinating Time: 12 to 24 Hours
Cook Time: 1 Hour and 30 minutes
Ready in: 1 Hour and 35 Minutes (excluding marinating time)
Makes 6 servings
Ingredients:
3 lbs beef roast (holiday roast, eye of round, rump roast etc.)
Marinade:
2 tbsp honey
2 tbsp soy sauce
1/2 tsp Tabasco sauce
1/4 cup lime juice
1 tsp ground cumin
2 tbsp oyster sauce (optional)
Directions:
1. Pierce beef roast numerous times with a fork. Combine marinade
ingredients in shallow container or resealable freezer bag, reserving
2 tbsp of the marinade for basting roast while barbecuing.
2. Marinate roast 12-24 hours in refrigerator. Discard used
marinade.
3. Preheat grill to medium heat.
4. Insert meat thermometer into center of beef roast.
5. Cook on rotisserie over drip pan in closed grill over INDIRECT
HEAT for about 1 1/2 hours (rare = internal temperature of 140ºF
or medium = internal temperature of 160ºF).
6. Baste beef roast with the reserved marinade while barbecuing.

Sizzling Hot Honey Pork Chops
Prep Time: 5 Minutes
Cook Time: 10 Minutes
Ready in: 15 Minutes
Makes 4 servings
Ingredients:
4 pork chops, 3/4 to 1 inch thick
Salt and pepper, to taste
6 tablespoons honey
2 tablespoons hot pepper sauce
Directions:
1. Preheat grill to medium heat.
2. In small bowl stir together honey and hot pepper sauce.
3. Season pork chops with salt and pepper.
4. Place pork chops on grill over direct heat, turning and
basting with honey-pepper sauce mixture, until chops are nicely
browned, about 8-10 minutes.

Fiesta Chicken Breasts
Prep Time: 5 Minutes
Cook Time: 15 Minutes
Ready in: 20 Minutes
Makes 4 servings
Ingredients:
2 pounds skinless boneless chicken breasts
2 teaspoons chili powder
2 tablespoons canola oil
2 tablespoons lime juice
1 tablespoon hot pepper sauce
1 can (14 1/2 ounces) Mexican style tomatoes
1 can (4 ounces) mild chopped green chilies
Serve with:
- shredded Monterey Jack cheese
- shredded lettuce
- cilantro sprigs
- lime wedges
- warm corn tortillas (optional)
Directions:
1. Rub chicken breasts with chili powder.
2. In large, nonstick skillet over medium heat, heat oil.
3. Add chicken; cook 4 to 5 minutes on each side or until
browned.
4. Add tomatoes, chilies, lime juice and pepper sauce to skillet.
5. Reduce heat to medium-low; cover and simmer 12 to 15 minutes,
or until chicken is cooked through.
Serving suggestion: On each plate, place a cooked chicken
breast on bed of shredded lettuce; top with sauce from skillet.
Sprinkle with cheese and garnish with lime and cilantro. Accompany
with a basket of warm tortillas.

** GRILLING TIPS **
It's the cut that counts . . . .
Here are a few helpful grilling tips for tender, moist and
tasty meat and fish:
- The best cut for grilling beef steaks is a full one inch
thick.
- Trim beef steaks to 1/8 inch fat. This reduces grease drippings
to help minimize open flames.
- If you like your hamburgers juicy, go with ground beef that
is about 15 to 20 percent fat.
- As for fish, have the fillets cut from 1 to 1 1/2 inches
thick. Anything thinner will dry out too quickly.
- Pork chops should also be at least 1 to 1 1/2 inches thick.
- Pork should be cook until the meat is no longer pink along
the bone and when the juices run clear.
- To keep skinless chicken parts (especially chicken breasts)
moist, brush lightly with oil before grilling.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
