** 3 AFC CHAMPIONSHIP GAME RECIPES FOR YOU **
New England Patriots "Eskimo Up" Jambalaya
Prep Time: 20 Minutes
Cook Time: about 1 Hour and 10 Minutes
Ready in: about 1 Hour and 40 Minutes WITH standing time.
Makes 10 to 12 servings
Ingredients:
1 lb. sweet sausage, cut crosswise into 1/4-inch slices
1 1/2 lbs. boneless, skinless chicken breast, cut into 1-inch
cubes
1 lb. pound honey molasses ham, cut into 1/2-inch cubes
1/2 cup olive oil
3 cups chopped yellow onions
1 cup chopped bell peppers
1 cup chopped celery
2 teaspoons salt (divided)
1 teaspoon cayenne (divided)
1 tablespoon chopped garlic
3 bay leaves
3 cups medium-grain white rice
6 cups chicken stock
1/2 cup chopped green onions, green tops only
1/2 chopped fresh parsley
Directions:
1. Heat the oil in a large cast-iron Dutch oven, or large, heavy
pot over medium-high heat. Add the onions, bell peppers, celery,
1 teaspoon of the salt, 3/4 teaspoon of the cayenne, 1 teaspoon
rosemary, and 1 teaspoon of basil and cook, stirring, until the
vegetables are very soft, for about 7 minutes.
2. Add the garlic and cook, stirring, for 30 seconds. Add the
sausage and cook, stirring and scraping the bottom and sides
of the pot to loosen any browned particles, until browned, about
6 minutes.
3. Season the chicken breast with the remaining 1 teaspoon salt
and 1/4 teaspoon of cayenne. Add the chicken breasts and the
bay leaves, and cook, stirring, until browned, about 6 minutes.
Add the honey molasses ham and cook, stirring, for 2 minutes.
Add the rice and cook, stirring, for 2 minutes.
4. Add the stock, stir to combine, and cover. Lower the heat
to low and cook without stirring until the rice is tender and
all the liquid is absorbed, 45 minutes. Remove the pot from the
heat and let stand, covered, without stirring for 10 minutes.
5. Remove the bay leaves. Stir in the green onions and parsley,
and serve immediately.

Tom Brady's "Red Zone" Chili
Prep Time: 10 Minutes
Cook Time: about 1 Hour and 40 Minutes
Ready in: about 1 Hour and 50 Minutes
Makes 4 to 6 servings
Ingredients:
3 lbs. extra lean beef for stew, (cut into 1-inch cubes)
1/4 cup olive oil
1 medium onion, chopped
3 garlic cloves, minced
3 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons salt
2 teaspoons hot pepper sauce
1 teaspoon basil
3 cups water
1 can (4.5 ounces) chopped green chilies, drained
Directions:
1. In a large saucepan, heat the olive oil over medium-high heat,
add the stew beef and cook for 5 minutes; then drain off the
liquid.
2. Add the onion and garlic and sauté for 5 minutes, stirring
frequently, until the beef is browned on all sides and the onion
is tender.
3. Add the chili powder, cumin, salt, basil and pepper sauce,
cook for 1 minute, stirring constantly.
4. Add the water and chilies and bring to a boil, stirring occasionally.
Reduce the heat to low, cover, and simmer for 45 minutes, stirring
occasionally.
5. Uncover and simmer for 45 more minutes or until the beef is
fork-tender, stirring occasionally.

"Foxboro Style" Chicken Wings - (recipe from Janice)
Prep Time: 5 Minutes
Cook Time: about 5 Hours
Ready in: about 5 Hours
Makes 10 to 12 servings
Ingredients:
5 lbs. chicken wings
1 bottle of soy sauce
1 cup brown sugar
Directions:
1. In a crock pot, add the chicken wings.
2. Sprinkle with the brown sugar.
3. Pour the soy sauce over the chicken wings and stir.
4. Cover and cook on HIGH for 4 Hours stirring occasionally.
5. During the 5 Hours, set the temperature control on the crock
pot to low.
6. Serve and enjoy!

** COOKING TIP FROM HAVERHILL BEEF **
Braising Beef . . .
QUESTION: Do you have any tips for braising beef?
ANSWER:
1. Slowly brown beef on all sides in a small amount of oil in
a heavy pan. Pour off drippings and season as desired.
2. Add a small amount (1/2 - 2 cups) of liquid, such as stock,
water or wine.
3. Cover tightly and simmer gently over low heat on range top
or in a 325 degrees F oven following the guide below or until
fork tender. Reduce or thicken cooking liquid as desired.
BEEF BRAISING GUIDE:
- Chuck Pot Roast (Arm, Shoulder or Blade), boneless.... 2-1/2
to 4 pounds.... 2 to 3 hours
- Chuck Shoulder Steak, boneless.... 3/4 to 1 inch.... 1-1/4
to 1-3/4 hours
- Brisket, fresh.... 2-1/2 to 3-1/2 pounds.... 1-1/4 to 1-3/4
hours
- Round Steak, (Eye or Bottom), boneless.... 3/4 to 1 inch thick....
1-1/4 to 1-3/4 hours
- Round Steak, (Eye or Bottom), boneless.... 1 to 1-1/2 inch
thick.... 1-3/4 to 2-1/2 hours
- For Top Round Steak, braising is not recommended.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
