** 3 RECIPES FOR YOU **
Grilled Mardi Gras Style Boneless Pork Chops
Prep Time: 5 Minutes
Cook Time: about 15 Minutes
Ready in: 20 Minutes
Makes 4 servings
Ingredients:
4 boneless pork center cut chops, about 1 1/2-inches thick
Seasoning:
1 teaspoon seasoned salt
1/2 teaspoon cayenne pepper
1 teaspoon dry sage
1 tablespoon paprika
1/2 teaspoon black pepper
1/4 teaspoon thyme
1/2 teaspoon garlic powder
Directions:
1. Preheat grill to medium heat.
2. In a small mixing bowl, combine the seasoning ingredients:
salt, cayenne pepper, dry sage, paprika, black pepper, thyme
and garlic powder. Set aside.
3. Take each boneless pork chop and coat all sides with the
seasoning mixture.
4. Place the boneless pork chops on the grill and cook uncovered,
7-8 minutes per side, turning once with tongs to brown evenly
and to retain juiciness.

Texas Smoked Mesquite Beef Brisket
Prep Time: 1 Hour
Cook Time: 8 to 10 Hours
Ready in: about 10 to 11 Hours
Makes 14 to 16 servings
Ingredients:
1 beef brisket about 10 to 14 pounds
Seasoning Mixture:
1/4 cup brown sugar
1/4 cup cumin
1/4 cup chili powder
1/4 cup kosher salt
1/4 cup sugar
1/4 cup freshly cracked black pepper
1/4 cup dry sage
2 tablespoons cayenne pepper
1/2 cup paprika
Wood:
mesquite aromatic wood
Directions:
1. Build a fire in one half of a large kettle or smoker grill
using mesquite aromatic wood according to your grill instructions.
NOTE: Be sure to fill the water pan with water.
2. Meanwhile, in a large bowl, combine the seasoning ingredients:
brown sugar, cumin, chili powder, salt, sugar, black pepper,
dried sage, cayenne pepper and paprika and mix well.
3. Rub the beef brisket thoroughly on all sides with the seasoning
mixture and set aside.
4. When fire is ready, place beef brisket on grill grids,
making sure that it is not above any part of the fire. Close
grill or smoker cover and open vent about 1/2-inch.
5. Feeding the fire periodically, cook for the beef brisket
8 to 10 hours or until the internal temperature is 165º
to 170ºF (measured with a meat thermometer) and the meat
is very tender. The exterior of the meat should be very black.
NOTE: Be sure to keep the water pan with filled with water.
6. Remove the beef brisket from the fire, trim off excess
fat and carve against the grain into very thin slices.

Grilled Cranberry-Lime Pork Tenderloin
Prep Time: 5 Minutes
Cook Time: about 25 Minutes
Ready in: about 30 Minutes
Makes 3 to 4 servings
Ingredients:
2 lbs. pork tenderloin
1/4 cup cranberry juice
1/4 cup of lime juice
2 tablespoons olive oil
2 cloves garlic, finely chopped
1 tablespoon chopped fresh rosemary
1/4 teaspoon salt
1 tablespoon fresh chopped thyme
1/2 teaspoon parsley
1/4 teaspoon crack black pepper
Directions:
1. Pre-heat grill to medium heat.
2. In medium bowl, mix together the cranberry juice, lemon juice,
olive oil, garlic, rosemary, salt, thyme, parsley and pepper
until well blended. Set aside.
3. Place the pork tenderloin on the heated grill grid and grill,
turning occasionally and basting with lemon-lime mixture, about
11 to 13 minutes each side minutes or until meat thermometer
inserted in center registers 160°F. Note: Do not baste during
the last 5 minutes of grilling.

** BEEF GRILLING TIPS **
- Always bring your beef steak, roast or burger straight from
refrigerator to the grill. Place on cooking grid directly over
coals. NOTE: If recipe requires seasoning, rub or herbs, do so
according to the recipe.
- Grill beef at medium to medium-low temperatures ensures
even cooking. If the grill temperature is too high, beef can
char and become overcooked on the outside before the interior
reaches the desired doneness. Charring beef is not recommended.
- Proper airflow is key to controlling the temperature of
the grill. Be sure to follow your grill instructions to main
the proper airflow.
- It is best to trim any excess fat from the beef steak or
roast to avoid flare-ups while grilling.
- Always use a pair of long-handled tongs for turning steaks;
spatulas for burgers. A fork will pierce the beef causing loss
of flavorful juices.
- Always check the internal temperature of the beef steak,
roast or burger with a meat thermometer. For best results, use
an instant-read thermometer to determine doneness. NOTE: For
beef steaks and burgers, insert the thermometer horizontally
into the side (not the top) to check the internal temperature.
Cook beef steaks to at least 145°F (medium rare doneness).
Cook beef burgers to at least 160°F (medium doneness.
- Grill Grid Clean-up: Unless otherwise specified by your
grill instructions and using EXTREME CAUTION, use a wire brush
to clean the cooking grid. NOTE: The grid cleans better when
it's hot.
NOTE: NEVER, NEVER LET YOUR CHILDREN COOK OR GRILL UNSUPERVISED!
