STEAK MILANESE

Makes 4 servings
Ingredients:
4 beef cubed steaks (about
1 pound)
1/2 teaspoon salt
1/4 teaspoon pepper
1 to 2 tablespoons olive oil
1/4 cup chopped tomato
Chopped fresh parsley
Coating:
1 egg
1 tablespoon water
1/2 cup seasoned dry bread crumbs
2 tablespoons grated Parmesan cheese
Directions:
1. Beat egg with water
in shallow dish until blended. Combine bread crumbs and cheese
in second shallow dish. Season beef steaks on both sides with
salt and pepper. Dip each steak into egg mixture, then into bread
crumb mixture to coat evenly.
2. Heat 1 tablespoon oil in 12-inch
nonstick skillet over medium heat until hot. Place steaks in
skillet; cook 5 to 6 minutes for medium rare to medium doneness,
turning once. Cook steaks in batches, if necessary, and add remaining
oil as needed. Sprinkle with tomato and parsley, as desired. |
