PEPPERED
BEEF TENDERLOIN ROAST

Makes about 10 servings
Ingredients:
3 1/2 lb. beef tenderloin
roast
1 tsp. dried oregano leaves
1 tsp. dried thyme leaves
1 tsp. paprika
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground white pepper
1/2 tsp. ground black pepper
1/4 tsp. ground red pepper
Directions:
1. Preheat oven to 425ºF.
2. Combine all ingredients and
rub over surface of the beef tenderloin roast.
3. Place roast on rack in an
open roasting pan. Insert meat thermometer so bulb is centered
in the thickest part. NOTE: Do not add water or cover.
4. Roast for 45 to 50 minutes.
5. Remove beef tenderloin roast
when thermometer reads 135ºF for medium-rare.
6. Let stand for 10 minutes before
carving.
7. Carve roast thin and serve. |
