SEASONED
CHICKEN BREAST CUTLETS

Makes 4 servings
Ingredients:
1 1/2 lbs. of boneless
chicken breast cutlets
1 teaspoon water
1 large egg
ground pepper to taste
salt to taste
1/2 cup Italian seasoned bread crumbs
1/2 cup grated Parmesan cheese
3 tablespoons olive oil
1 large egg beaten with 1 teaspoon water
Directions:
1. Beat the egg with
water.
2. Season the chicken cutlets
with pepper and salt.
3. On wax paper, combine the
bread crumbs and the Parmesan cheese.
4. Dip the chicken cutlets in
the egg mixture and dredge in bread crumb mixture.
5. In a large, non-stick skillet
over medium/high heat, heat the olive oil.
6. Add the chicken cutlets and
sauté for 3 minutes per side, until golden brown and cooked
