Asian Chicken Drumsticks

Makes 4 servings
Ingredients:
8 Fresh Chicken Drumsticks
3 teaspoons olive oil
1/2 teaspoon rosemary
3/4 cup chicken broth
1/4 teaspoon pepper
3 cloves garlic, thinly sliced
2 large shallots, thinly sliced
1 jalapeño pepper, fresh, seeded and finely chopped
1 tablespoon soy sauce
1 teaspoon sugar
1/2 teaspoon rosemary
1/2 cup packed basil leaves, thinly sliced
Directions:
1. In a large non-stick skillet with a tight fitting cover, heat
the olive oil over high. Add the chicken drumsticks, sprinkle
with the pepper and rosemary, and cook 6 to 7 minutes or until
browned on all sides. Remove chicken drumsticks; set aside.
2. Reduce the heat to medium;
add the garlic, shallots and jalapeño to skillet and cook,
stirring, 2 minutes. Return the chicken drumsticks to the skillet;
stir in the chicken broth, soy sauce and sugar. Cover and cook,
turning once, 20 minutes or until meat thermometer inserted in
center registers 180°F.
3. Place cook chicken drumsticks
on a serving platter and sprinkle with basil. |
