CHICKEN
PORTABELLA SKILLET |

Makes 4 servings
Ingredients:
2 lbs. boneless skinless
chicken breast
ground pepper to taste
salt to taste
2 tablespoons butter
1 lb. portabella mushrooms
1 tablespoon chopped fresh thyme
2/3 cup chicken broth
1/3 cup Burgundy wine
Directions:
1. Slice portabella mushrooms.
Set aside.
2. Season chicken breasts with
pepper and salt. Set aside.
3. In large non-stick skillet,
melt 1 tablespoon butter over medium-high heat and brown chicken
for about 6 minutes, turning once. Remove and set aside.
4. Melt remaining 1 tablespoon
butter and cook mushrooms, thyme, salt and pepper, stirring occasionally,
for about 4 minutes.
5. Stir in the chicken broth
and wine; bring to a boil.
6. Return chicken to the skillet;
reduce heat to low; cover and simmer for about 20 minutes or
until chicken is cooked through. |
