GRILLED
ONANGE-GINGER BONELESS CHICKEN THIGHS

Makes 3 to 4 servings
Ingredients:
2 lbs. boneless skinless
chicken thighs
Orange-Ginger Basting Mixture:
1/2 cup orange marmalade
1 1/2 teaspoons ground ginger
1 tablespoon soy sauce
1/2 teaspoon thyme
1 teaspoon dried basil
1/2 teaspoon rosemary
Directions:
1. Pre-heat grill to
medium heat.
2. In a small mixing bowl, blend
together the orange marmalade, ginger, soy sauce, thyme, basil
and rosemary. Set aside.
3. Place the chicken thighs on
the grill grids and cook, turning occasionally and basting with
marmalade-ginger mixture, 20 minutes or until meat thermometer
inserted in thickest part of thigh registers 180°F. Note:
Do not baste during last 5 minutes of grilling. |
