IRISH
HOLIDAY ROAST

Ready In: about 2 Hours and 10 Minutes
Makes about 4 to 6 servings
Ingredients:
4 lb. Holiday Roast
3 Tbsp coarse ground black pepper
3 Tbsp garlic salt
1 tsp dried thyme
1 tsp dried rosemary
2-3 cups favorite Irish Beer
1 Bay Leaf
1/4 cup olive oil
2 cups cut carrots
1 green bell pepper, sliced in strips
2-3 potatoes cubed
1 Tbsp flour
Directions:
1. Heat oven to 350F.
2. In a small mixing bowl, mix
together the pepper, garlic salt rosemary and thyme; then rub
onto all sides of the Holiday Roast.
3. Place the Holiday Roast a
roasting pan, add oil, bay leaf, and beer.
4. Add 1 cup water.
5. Roast in the oven covered
for 90 minutes.
6. Add the vegetables, roast
covered for 30 minutes.
7. Remove the Holiday Roast and
vegetables and let stand.
Meanwhile, prepare gravy.
8. Gravy: pour the pan liquids
into a small saucepan, heat to near boiling.
9. In a mixing container, mix
well 1/2 cup COLD water and flour.
10. Add the flour/water mixture
to saucepan, stirring constantly. Reduce to simmer, stir until
thickened. |
