Beam Ham

Makes 10 to 12 servings
Ingredients:
12 lb. pre-cooked, bone-in
ham*
paprika
salt
pepper
Injecting/Basting Sauce:
1 cup Jim Beam bourbon
1 cup apple cider
12 oz. beer
2 medium apples, quartered
3 medium oranges, quartered
2 stalks celery, chopped
1 cup brown sugar
3 tsp. minced garlic
Directions:
Pat ham down with salt,
pepper and paprika. Combine sauce ingredients and inject half
into ham. Place ham on rotis, and place other half of sauce in
drip pan under ham. Turn rotis on medium to allow for several
hours of cooking time. Baste ham every 20 minutes until thoroughly
heated (approximately 2 hours) - internal temperature should
reach 170°F. Wet hickory, apple or sassafras wood may be
added to smoking tray for additional flavor.
* If using an uncooked boneless
ham, turn rotis to high and adjust cooking time. |
