GRILLED
SANTA FE STYLE PORK TENDERLOIN

EXCLUDING marinating time
Makes 6 servings
Ingredients:
1 1/2 lbs. pork tenderloin
5 teaspoons chili powder
1 1/2 teaspoons oregano
1 teaspoon rosemary
3/4 teaspoon ground cumin
1 teaspoon thyme
2 cloves garlic, crushed
1 tablespoon olive oil
Directions:
1. In a mixing bowl,
mix well together the chili power, oregano, rosemary, ground
cumin, thyme, garlic and olive oil to make marinade.
2. Add the marinade mixture above
into a resealable plastic bag along with the pork tenderloin.
Be sure that the entire pork tenderloin is covered with the marinade.
3. Seal the bag after removing
all excess air and place in the refrigerator for at least 2 hours.
(or up to 24 hours.)
4. Pre-heat grill to medium heat.
5. Remove the pork tenderloins
from the bag and place on the pre-heated grill grids. NOTE: Discard
unused marinade.
6. Grill for 15 to 20 minutes,
until thermometer inserted reads 155 to 160 degrees F. Pork is
done when there is still a hint of pink in the center. Slice
to serve. |
