PORK
TENDERLOIN SKILLET

and 30 Minutes including 1 hour marinating time.
Makes 6 servings
Ingredients:
1 1/2 lbs. pork tenderloin
1/2 cup dry sherry
2 tablespoons soy sauce
1/2 teaspoon ground black pepper
2 cloves garlic, crushed
1/2 cup ground almonds
1 teaspoon olive oil
1 cup chopped onion
1 carrot, peeled and diced
1 celery rib, chopped
Directions:
1. In small bowl stir
together sherry, soy sauce, pepper and garlic; pour over pork
tenderloin in a resealable plastic bag. Seal bag; marinate in
refrigerator 1 hour.
2. Remove pork tenderloin from
marinade mixture, reserving marinade; pat dry.
3. Coat pork tenderloin with
almonds.
4. Heat olive oil in large skillet
over medium heat.
5. Brown pork tenderloin on all
sides, about 5 minutes, turning carefully.
6. Reduce heat to low, add reserved
marinade, onion, carrot and celery; cover and simmer 10 to 12
minutes. |
