Makes 3 to 4 servings
Ingredients:
1 1/2 lb. ground beef
1 large clove garlic, crushed
1 Tbsp. chili powder
1/2 tsp. salt
1 medium red or green bell pepper, cut into 1/2 inch pieces
3 cups cooked rice (cooled)
1 cup frozen peas (defrosted)
3/4 cup salsa
Directions:
1. Cooked rice according
to package and let cool.
2. In a large non-stick skillet,
brown the ground beef, bell pepper and garlic over medium heat
8 to 10 minutes or until ground beef is no longer pink, breaking
up into 3/4 inch crumbles.
3. Pour off drippings and add
chili powder and salt.
4. Add rice to non-stick skillet
and mix well. Continue cooking 2 minutes or until rice is hot,
stirring occasionally.
5. Stir in peas and salsa; heat
