GRILLED
TARRAGON CHICKEN BREASTS

(excluding marinating time)
Makes 6 servings
Ingredients:
4 pounds of whole chicken
breasts
1 cup fresh lime juice
1/2 cup canola oil
1 cup chopped onions
1/2 cup chopped fresh tarragon or 4 tablespoons dried tarragon
leaves
Salt and ground pepper
Directions:
1. Place chicken breasts in large, shallow bowl.
2. In small bowl, combine lime
juice and remaining ingredients; set aside 1/2 cup lime mixture.
3. Pour remaining mixture over
chicken; loosen skin and spoon some marinade under skin. Cover
and refrigerate 1 hour or longer.
4. Preheat grill to high heat.
5. Drain chicken and discard
marinade.
6. Grill chicken, uncovered,
about 5 to 6 inches over heat for 30 to 40 minutes or until cooked
through, turning and basting frequently with reserved lime mixture. |
