Roasted Turkey With Honey-Orange Glaze

Makes about 16 Servings
Ingredients:
15 lb. whole turkey, fresh or frozen (thawed)
2 teaspoons chili powder
1/2 teaspoon garlic powder
1/4 teaspoon ground allspice
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon ground red pepper
2 tablespoons honey
1/2 cup orange marmalade
1 teaspoon cold water
2 Tablespoons olive oil
Directions:
1. Preheat the oven to 325 degree F.
2. Remove neck and giblets from body and neck cavities of turkey;
discard or refrigerate for another use.
3. Rinse the turkey with cold running water; drain and pat dry
with paper towels.
4. Mix the chili powder, garlic powder, allspice, cumin, salt,
red pepper, honey, orange marmalade and water in small bowl until
well blended; set aside.
6. Tie drumsticks together and twist wing tips behind back.
7. Place the turkey, breast side up, on a wire roasting rack
(sprayed with non-stick cooking spray) in shallow roasting pan.
Insert an oven-safe thermometer into the thickest part of the
thigh, being careful it does not touch the bone.
8. Brush the turkey with the olive oil.
9. Roast the turkey in the pre-heated oven for a total of 3 to
3-1/2 hours, covering breast and top of drumsticks loosely with
foil after 2 hours to prevent overcooking of breast.
10. Uncover the turkey breast and brush turkey with honey-orange
mixture when about 45 minutes of roasting time remains. Return
foil to top of turkey and continue roasting until food thermometer,
inserted deep in thigh, reaches 180 degrees F.
11. Let the turkey stand 15 minutes before carving. |
